This Green salad is absolutely packed full of vitamins, Nutrients and antioxidants, including the superfood Chlorophyll!   Chlorophyll is a type of plant pigment responsible for the absorption of light in the process of photosynthesis, which creates energy, and is responsible for giving green vegetables their beautiful colour! Proven chlorophyll benefits include supporting the body’s natural liver cleansing processes, improving digestive processes, optimizing skin health and anti-cancer protective properties! This is one of my go to salads after a weekend of over indulging and I’m craving all things green!

Ingredients:

2 large Kale stems or 2 cups of chopped Kale leaves

1 cup of rocket or spinach leaves

1 cup broccolini

1 cup green beans

1 green capsicum sliced

1 avocado sliced

3 Tblsp Hemp seeds

¼ cup Pumpkin seeds

1 Tbslp Olive oil

2 Tbsp apple cider vinegar

Directions:

Steam Kale leaves, Broccolini and green beans until vibrant green and remain crunchy. Set aside to cool. Slice avocado, capsicum and combine with spinach or rocket into a medium bowl. Toss through the cooled steamed greens. Dress with olive oil and apple cider vinegar and sprinkle over pumpkin seeds and hemp seeds.
