Quick Cauliflower Fried Rice

Serves 3 GF* DF* Vegetarian*

Cauliflower rice has become a great alternative to white rice providing a low calorie high fibre option.  This dish can be a standalone meal but is also great as a side to accompany your weekly dinners! It also great for using up any leftover vegies in the fridge from the week.


1 Tbslp Olive oil

1 Tblsp Ghee

2 Tbslp Tamari or low sodium Soy sauce

1 half cauliflower

2 cups sliced purple cabbage

1 carrot grated

Handful of chives diced

1 free range egg


Break up the cauliflower head into small pieces and blitz in a food processor until small rice like consistency. Heat olive oil and Ghee in a medium skillet on medium heat. Sautee cauliflower in the pan until it starts to soften. Add in sliced purple cabbage, carrot and chives and stir through until combined. Place the lid on top and let steam for 2-3 minutes. Season well with salt and pepper and the Tamari sauce. Remove the lid and make a well in the centre of the mixture. Crack into pan 1 egg and replace the lid. Cook for a further 1-2 minutes until the egg begins to set, then vigorously break the yolk and stir through the entire mixture. Serve and enjoy.
